Blueberry & Avocado Zoodle Salad

Serves: 2
Ingredients
2-3 zucchinis
1 cup blueberries
1 avocado
1/4 cup lemon juice
1/4 cup honey
1/4 cup chopped basil
Salt & Pepper
Flax & Chia Seeds
(optional)
Directions
Spiralize, or shaved zucchini, and add to a large bowl. Add blueberries and diced avocado. Set aside.
Whisk lemon juice, honey, basil, and flax/chia seeds in a bowl to create the dressing. Add salt & pepper to taste.
Add dressing to the bowl with zoodles, blueberries, and avocado. Mix well. Refrigerate until served.
Enjoy!!
This dish is very refreshing! You can substitute blueberries for other fruit, if desired such as strawberries or another berry in season. If you want softer zucchini noodles, allow noodles to marinate in the dressing for about an hour before serving.
