Arugula Topped with Airfryed Salmon & Avocado

Prep Time: 5 Minutes
Cook Time: 15 Minutes
Serves: 1
Ingredients:
2 cups arugula
4oz salmon
1 avocado
1tbsp dijon mustard
2tbsp ranch
Directions:
Lay a bed of arugula on a plate and dice avocado.
Preheat airfryer for 400 degrees. For fresh salmon airfry for 7 minutes and let rest for 2 minutes. For frozen salmon airfry for 12 minutes and rest for 2 minutes. Shred salmon and add to 'salad'.
For dressing mix 1tbsp of dijon and 2tbsp of ranch. Add dill if desired or garnish entire dish.
Enjoy!
This dish is so easy, and so full of flavor!! Its a healthy light meal that is sure to satisfy your tastebuds.
Anyone who talks to me knows I can't help but rave about my aerogarden!! I get fresh herbs and veggies year round. For this dish I used my most recent harvest of arugula & dill. Honestly this dish was inspired by the over abundace of arugula!
